Pasta with Caramelized Garlic
and Fresh Parsley
With some caramelized garlic on hand, this hearty pasta dish is a snap to make.
Yield: 6 servings
Cooking Time: 5 to 15 minutes for the pasta;
5 to 8 hours for the caramelized garlic
1-1/2 pounds pasta of your choice, fresh or dried
5 to 6 cloves Caramelized Garlic
1/3 cup garlic oil from Caramelized Garlic
1 cup chopped fresh flat-leaf parsley
Salt and freshly ground black pepper to taste
Freshly grated Parmesan cheese, preferably Parmigiano-Reggiano
Cook the pasta in rapidly boiling salted water until at dente. Drain, reserving 1/2cup of the cooking water. Place the pasta in a warmed bowl. Squeeze the pulp out of the garlic cloves into the pasta, and add the garlic oil, parsley, salt, and pepper. Toss, add some of the reserved cooking water, if necessary, and serve. Pass the cheese separately.
