Makes 12 thighs; serves 4 persons
12 chicken thighs
3-4 tablespoons Exotic Rub (see recipe below)
2 tablespoons olive oil
4 tablespoons soy sauce
Massage the chicken pieces all over with the rub. Drizzle with olive oil and half the soy sauce. Cover and refrigerate. Marinate 2 hours or overnight. Drizzle with the remaining soy sauce before grilling or broiling.
Makes 3/4 cup
The flavorings in this rub could be called Greek, Middle Eastern, or...just plain tasty.
2 teaspoons coarse sea salt
2 tablespoons ajwain
1 teaspoon Aleppo pepper
1 teaspoon sweet paprika
1 tablespoon citric acid
1 tablespoon granulated garlic
1/4 cup dried parsley
3 tablespoons freeze dried chives
2 teaspoon fennel seeds
2 tablespoons sugar
Combine all ingredients in the chopping bowl of a food processor or handblender. Process until ingredients are ground. Store in an airtight container until ready to use.
