Salad of Mâche with Artichokes and Niçoise Olives

4 ounces mâche
6.5 ounces marinated artichoke hearts
1/4 cup Niçoise olives
1 shallot, finely diced
2 teaspoons balsamic vinegar
2 teaspoons sherry vinegar
4 tablespoons olive oil
salt and black pepper
This salad has a wonderful harmony of flavors, perfect for spring or when the season's first artichokes arrive. Add roasted pearl onions for a contrast in color and flavor. The artichokes and pearl onions can be prepared ahead of time and make this recipe a snap to prepare. Dress the prepared artichokes and pearl onions together with a simple vinaigrette. Arrange on a plate with lightly dressed mâche and garnish with Niçoise olives. Toast points with olive tapenade are a nice complement to this salad.
