Actually, this sandwich is one of those guilty pleasures that I don't admit to making. I mean, white bread and mayonnaise? The foodie police are probably on their way right now. But I love this sandwich and it couldn't be easier to make, but wait until the end of summer when tomatoes are wonderfully ripe.
Spread mayonnaise on both slices of bread, then arrange one layer of not-too-thin slices of tomato on one slice. Salt and pepper if you wish. Cover with the other slice of bread and enjoy.
