Frequented by New Yorkers, tourists, and celebrities, Bubby's is the New York institution for peerless homemade pie. Now for the first time, Chef Ron Silver is sharing his classic pie recipes in Bubby's Homemade Pies with home bakers so that they can create these scrumptious pies in their own kitchens.
Like a good pie, Bubby's Homemade Pies begins with the crust. The first chapter offers more than 15 recipes, including flaky butter crusts, sweet crumb cookie crusts, and savory herb and cheese crusts. With 93 detailed illustrations of how to mix, roll out, and crimp, vent, or lattice your crusts, your pies will taste and look perfect regardless of your skill level. Over 100 spectacular pie recipes follow, offering a cornucopia of choices—fruit pies for all seasons, savory pies, deep-dish desserts, fried pies and turnovers, cream and custard pies, and ice cream pies. In addition, "Ask Bubby" boxes throughout the book help solve common preparation problems, and a Perpetual Pie Calendar at the back of the book suggests the best pies for each month of the year, ensuring the freshest ingredients for the most incredible pies.
Inspired by recipes from grandmothers, accomplished bakers, and classic cookbooks, these pies have all been tested and perfected in Bubby's kitchens—and represent the very best of the pie-maker's art. Inspired by Bubby's Homemade Pies, award-winning baker Lisa Yockelson says, "If a pie cooling in a country breeze is your idea of baking nirvana, with its golden crust and juicy filling beckoning, then the delightful recipes in Bubby's Homemade Pies will guide you toward that goal"; Billy Crystal says, "I almost ate the book! If my bubby made pies like this, I'd weigh 400 pounds"; Kate Douglass, the co-owner of The Spotted Pig, says, "My dad always says, 'Save your fork, there's pie!'"; and The Daily Show host Jon Stewart says, "If you love pie, and I can only assume you do, Bubby's pies are the best. I'm eating one right now." Bubby's Homemade Pies will soon be on the forks and in the mouths of your family and friends too.
Ron Silver trained as a chef in kitchens throughout New York City. While working as a cook at Florent Restaurant in Manhattan's meatpacking district, he discovered a dearth of suppliers for the perfect, or even good, pie. He set out to create one, and Bubby's Pie Company was bom in 1990.
Jen Bervin comes from a long line of pie bakers in the Midwest and has been hosting pie socials since 1999.
