If you are known as a great cook among friends and family, then consider sharing the fruits of your labor by preserving them for others to enjoy during the holidays...or in the months ahead. A gift-basket filled with a spicy chutney, tart lemon curd and assorted sweet preserves will endear you to others for life. But, if the thought of canning seems intimidating, especially with recent headlines warning of food-borne bacteria and food spoilage, a visit to this site will give you all the information you need to preserve foods correctly and safely.

Brought to you by Bernardin Ltd of Toronto, Home Canning Online is an exhaustive internet resource on food preservation. Their Home Canning Magazine teaches you all the basics in either French or English. You'll geta lesson on the history of canning, a science lesson about the processes involved in preserving foods, step-by-step guides for applying techniques you've learned when working with low- and high-acid foods. There is also a guide for problem-solving with links to, among others, the USDA's Principles of Home Canning.
