Chevre, Tomato and Basil Crostini

Makes 4 servings
Chevre is more French than Italian, but its delicious flavor and lower fat content take it across culinary borders. Garden fresh tomatoes and basil make these crostini irresistible.
- 1 -1/2 ounces chevre (goat cheese)
- 4 ounces crusty Italian bread, cut into eight 1/2-ounce slices and toasted
- 4 small plum tomatoes, each cut into 4 slices
- 1/4 teaspoon salt
- Freshly ground black pepper, to taste
- 8 fresh basil leaves
Spread the chevre evenly over the bread slices; lay 2 slices of the tomato, slightly overlapping if necessary, over each. Sprinkle evenly with salt and pepper and top each with a basil leaf. Serve at room temperature.
Serving (2 slices) provides:
1/2 Vegetable, 1/2 Protein, 1 Bread
