by Rafael Palomino with Arlen Gargagliano
Known for his inventive Nuevo Latino cuisine, which combines his Colombian heritage with his French and New York culinary educations, as well as his extensive travels, Chef Rafael Palomino demonstrates his preferred style of entertaining at home in Latin Grill: simple, flavorful dishes cooked over fire, along with plenty of delicious complements.
Tasty without requiring a lot of work, the recipes in Latin Grill are fun, delicious, healthful, and designed for people who love to grill and to extend the warmth of their home to family and friends. Palomino offers everything home cooks need to create a fabulous barbecued meal, including simple marinades, fruit-filled barbecue sauces, appetizers, salads, side dishes and dipping sauces, desserts and cocktails.
Yellowfin Tuna and Mango Vodka Ceviche makes an elegant, exotic, and festive start, or try the couldn't-be-simpler Crisp Tortillas Topped with Prosciutto and Shaved Manchego Cheese. Grilled Caesar Salad puts a smoky twist on the beloved classic. Main courses don't get any better than Grilled Pork Chops with Passion Fruit-Jalapeño Barbecue Sauce, or Grilled Lobster Tails with Paprika-Garlic Oil, while dessert aficionados will swoon over Semisweet Chocolate and Coffee Brioche Bread Pudding. Let Latin Grill unlock new and exciting flavors for your grilling entertainment—after all, nothing yields more depth of flavor than cooking over fire!
