Cups are beverages made from a combination of seasonal fruits, juice, and a spirit. The fruit should impart its essence into the drink and not be completely infused. The fruit flavors should be fairly subtle. Almost any fruit can be used, but cups almost always include cucumber and mint.
Pimm's No.1 is a gin-based beverage popular in Great Britain. This is a great, refreshing summer cocktail. Traditionally, it is served with just a floating cucumber, but many variations include seasonal fruit. I prefer to shake everything together to impart more of the fruit, cucumber, and mint flavor into the drink. Feel free to add an additional garnish, if desired.
Combine the lemonade, Pimm's, cucumber slices, and fruit, if desired, in a cocktail shaker with ice. Shake moderately and pour into a large glass. Top with a splash of ginger ale and garnish with a mint sprig. This recipe can be multiplied by six and made in a pitcher.
