Ranch Oatmeal Pie
The Alisal Guest Ranch and Resort
Makes 1 (9-inch) pie
1-1/2 cups sugar
1 cup plus 2 tablespoons corn syrup
1-1/2 cups shredded coconut
1 cup plus 2 tablespoons oats
3/4 cup cream
6 tablespoons melted butter
1-1/2 tablespoons vanilla
1/8 teaspoon kosher salt
1 unbaked 9-inch pie shell
1. Heat oven to 350 degrees F.
2. Mix all ingredients (eggs through salt) in a large bowl and pour into an unbaked pie shell. You might have a little bit of batter left over.
3. Bake 45 to 55 minutes. The top will be golden brown.
4. Cool slightly and serve warm or chill for several hours.
