Greece is a meeting place between East and West, its cuisine mixing classical Mediterranean cooking with "oriental" influences from the Middle East. Greek food remains true to its roots, like ancient philosopher Epicurus' dictum to "live well and enjoy the simple things in life."

Yogurt Dip
2 cups yogurt
1 clove garlic
3 walnuts
1 teaspoon olive oil
Salt, pepper
Place yogurt in a strainer lined with a double layer of cheesecloth. Let sit for 2 hours. Place yogurt "cheese" in a medium bowl.
Mash garlic, walnuts, and olive oil together well. Mix into the yogurt cheese and season with salt and pepper.
