The Herbal Palate Cookbook

Sipping a cup of mint tea, savoring a stew perfumed with rosemary or baking a loaf of bread moist with sage—these are just a few of the culinary comforts that herbs provide. In The Herbal Palate Cookbook, Maggie Oster, a well-known horticulturist and author, teams up with Sal Gilbertie, a plantsman, herb craftsman and respected wholesale supplier of herbs, to present more than 150 traditional and innovative recipes and ideas for cultivating a palate for fresh herbs.

Illustrated with striking full-color photographs, ten chapters instruct how to incorporate herbs, whether fresh or dried, into a variety of dishes—appetizers, salads, soups, main courses, vegetables, grains, beans, breads, desserts, beverages and condiments. Simple, yet elegant recipes include Herbed Pita Crisps with Burnet Dip; Endive, Pear and Chervil Salad; Grilled Shrimp with Citrus and Herbs; Roast Duck with Sage and Pinenut Stuffing; Garden Vegetables on Rosemary Skewers; and Mango-Papaya-Mint Mousse.

Sharing his expert growing advice, Sal Gilbertie explains how to plant a successful herb container garden indoors or outdoors all year 'round. And, to complete this practical and inspirational guide, the authors have included definitions of the major herbs—their legends and lore, cultivation, nutritional value, flavor, scent and uses in cooking—an appendix listing sources for herb plants and organic gardening supplies, a glossary of herbs, suggested reading and an index. The Herbal Palate Cookbook is a selection of The Good Cook, a division of Book-of-the-Month Club, and Better Homes & Gardens Cook Book Club.

Maggie Oster is the author of twelve books, among them Herbal Vinegar, The Potato Garden and Recipes from an American Herb Garden. She divides her time between Louisville, Kentucky, and Palmyra, Indiana. Sal Gilbertie is the owner of Gilbertie's Herb Gardens of Westport and Easton, Connecticut, and the author of four books: Home Gardening at Its Best, Herb Gardening at Its Best, Herbs for the Holidays and Kitchen Herbs which received an International Association of Culinary Professionals (IACP) award. He lives in Easton, Connecticut.
