Or sup at the table of local farmer Torquato Innocenti as he orchestrates dishes like Torquato's Cold Pasta with Misunderstood Garlic or his hearty "Drowned" Cauliflower.

Willinger's tantalizing vegetable recipes are accompanied by grains, polenta and pasta as well as the occasional piece of meat or fish. Stressing the need for high-quality ingredients in her minimal recipes, she elaborates on "the utter importance of extra-virgin olive oil," and the other basic elements of the Italian pantry. For reasons of health and, of course, taste, she advises the use of only the freshest ingredients. Appropriately, she also recommends the finest brands to buy, furnishing mail-order information including Italian cultivar seed sources for gardeners.

A self-proclaimed "born-again Italian," Faith Willinger lives in Florence, writes for Gourmet magazine and is a weekly columnist for Epicurious, the Conde Nast Internet Food Site.
