Batterie de Cuisine


Utensils and Cookware
for your Thankgiving Dinner

As all experienced chefs know, having your cooking utensils set out and ready to grab in an instant is a key to efficient cooking. In a professional kitchen, an apprentice or assistant might do this for the chef. If you are lucky enough to have such a person, perhaps a child or a spouse or a good friend, then assign them the task of assembling the 'batterie de cuisine.' Here's what you will need:


  • one or two cutting boards
  • chef's knife or other sharp knife for chopping
  • a 2-cup measuring cup for liquid ingredients
  • a 1-cup measuring cup for dry ingredients
  • measuring spoons
  • 2 or 3 wooden spoons for stirring
  • 1 or 2 rubber spatulas for stirring and scraping bowls
  • salt shaker
  • pepper grinder
  • can opener

For the Cornbread-Water Chestnut Dressing

  • 8x13" baking dish or pan
  • large mixing bowl
  • skillet
  • foil

For the Turkey

  • roasting pan with rack
  • heavy duty foil
  • baster
  • instant-read thermometer
  • hand-blender or spice grinder
  • carving knife and fork
  • platter for serving and carving

Cranberry Relish

  • food processor
  • medium mixing bowl
  • serving dish and spoon

Green Bean Salad

  • skillet for toasting pecans
  • microwavable large bowl
  • hand blender or wire whisk and small bowl
  • lemon reamer or juicer

Turkey Stock

  • medium saucepan

Giblet Gravy

  • gravy boat or serving bowl with ladle
