French cuisine has influenced the eating habits of people around the world, especially those who enjoy "haute cuisine" in restaurants. But there are also many regional (or "provincial") styles of cooking that remain unique to France.
3/4 lb. fresh mushrooms, cleaned
1 lemon, juiced
1/3 c. olive oil
Remove stem end and cut mushrooms into 1/4" thick slices. Place in a bowl and sprinkle with lemon juice. Add salt and pepper, and pour on the oil. Toss gently. Let sit for 10 minutes. To serve, sprinkle with chopped parsley.
