by Madhur Jaffrey
The result of a lifetime of culinary exploration, Madhur Jaffrey's World Vegetarian is the award-winning cookbook author's greatest achievement. More than 750 meatless recipes drawn from virtually all the world's culinary traditions, from dishes Madhur enjoyed as a child in India and those she has created for friends and family to delights she discovered in travels through East Asia, North Africa, Europe, Central America and the Caribbean.
"As I travel around the world," explains author Madhur Jaffrey," I see that we seem to be heading toward a blurring of boundaries between individual ethnic cuisines. Yet in a way, this is nothing new. There is no nation that has not absorbed, sometimes with ease and sometimes with great disquiet and fulmination, new produce and new cooking techniques from other worlds. Mixing and matching, borrowing and lending, we are constantly enriching our cuisines. Today, this is happening at a faster pace than it did 500 years ago. We live in a new world where each of us not only knows a dozen food traditions other than the one we were bom with, but are on close and easy terms with them."
