The Caribbean includes islands and countries as diverse as Cuba, Curacao, Dominica, Dominican Republic, French Antilles, Guadeloupe and Martinique, Haiti, Jamaica, Trinidad and Tobago, and The Virgin Islands. Common foods like seafood, chicken and coconut, as well as recipes like jerk and callaloo, unite these islands into a heterogeneous culinary paradise.

Salt Codfish Stew

  • 2 tablespoons annatto oil
  • 1/2 cup sofrito
  • 6 tomatoes, seeded, diced
  • 8 ounces tomato sauce
  • 2 pounds salt codfish, soaked, cooked, shredded
  • 1 bay leaf
  • Salt, pepper

Heat annatto oil in a large skillet. Add the sofrito and tomatoes. Cook over medium heat for 10 minutes. Stir in the tomato sauce. Add remaining ingredients and simmer for 15 minutes. Season with salt and pepper.
